    Description

    This course introduces the concepts of colloid and interface chemistry with specific focus on association colloids. It discusses surfactant self-assembly and nanostructure formation from fundamental aspects to applications in food and drug delivery. Important experimental techniques for characterisation of structure and function of colloids are introduced (i.e. scattering methods, cryogenic electron microscopy, tensiometry).

    Training objectives

    ·         Understand colloidal systems.

    ·         Reflect on colloid and interface science (nanostructures / self-assembly in chemistry and biology).

    ·         Interpret the interplay between molecular-, supramolecular structure and material properties,

              specifically related to applications in food and pharmaceutical chemistry.

    ·         Select experimental techniques to study self-assembly and interactions in soft matter and

              biological systems.

    ·         Discuss and analyse challenges in food colloid and drug delivery.

    ·         Analyse papers from scientific literature in the field.
