Lecture as part of the search for a Professor in Food Science and Technology

Abstract: Efforts to sustainably ensure food security for a growing population face challenges as traditional agri-food systems surpass planetary boundaries. This talk advocates the multidisciplinary nature of food science and technology to holistically transform the food system. Harnessing a whole value-chain approach, it elucidates on basic and applied research initiatives for raw material transformation and food process design to provide more sustainable, nutritionally functional foods. It highlights the relevance of consumer integration and the potential of informed data to define key target actions along the value-chain. Implementation initiatives demonstrate the impact of these science-driven innovations for society and industry, while international collaborations highlight their relevance to sustainable development goals and the establishment of sustainable food systems on a global scale.
