Prof. Salentinig leads the Biocolloids Lab, where he investigates bio-inspired materials at the interface of food and health sciences.

His work explores how natural food emulsions (e.g. milk, mayonnaise) form ordered liquid-crystalline nanostructures during digestion—a discovery that opens avenues for functional or personalized nutrition and targeted oral drug delivery.
